Cajun Chicken Salad

Easy, yet very flavorful salad. This is a standard spring/summer salad for my family.
Ingredients:
spiced nuts
1 tbsp butter
1 tsp sugar
1/8 tsp ground red cayenne pepper
1/2 c pecan or walnut halves
dressing
1/2 c oil
1 tsp coarse ground mustard
1 tbsp cider vinegar
1 tbsp balsamic vinegar
2 tbsp honey
1/8 tsp ground red cayenne pepper or to taste
salad
1/2 lb (approx 2) boneless skinless chicken breasts
1 tbsp cajun seasoning
1 tsp garlic
5 c mixed salad greens (i like a spring mix or spinach and red leaf lettuce)
1/2 red bell pepper cut into thin strips
1/2 red onion cut into thin strips
1 large tomato, cut into chunks
Directions:
1. Nuts: Melt butter in small skillet over medium heat. Stir in sugar and cayenne pepper; mix well. Stir in nuts to coat. Cook and stir 4-5 minutes or until nuts are lightly toasted. Remove from heat and cool.
2. Dressing: In small container with cover, mix all dressing ingredients shake very well. Refrigerate until ready to use.
3. Preheat grill. Sprinkle chicken with cajun seasoning. Grill chicken on medium heat until done, about 10-12 minutes. When done, cut into strips.
4. Toss warm chicken, onion, red pepper and tomato with salad greens. Sprinkle with spiced nuts. Serve with dressing.
