Directions
Ingredients:
12 pieces bacon, chopped
1 medium onion, diced
1 (51 ounce) can chopped clams with juice, juice reserved
2 potatoes, cubed 2
4 celery ribs, diced
1 cup heavy cream
2 cups low-fat milk
1 teaspoon old bay seasoning, seasoning
2 tablespoons clam base
instant mashed potatoes, as needed for thickening
Directions:
1. Add bacon to sauce pan and cook on medium low heat until crispy.
2. Add onion and cook until translucent.
3. Add Celary and continue cooking until soft.
4. Add clam juice and potatoes.
5. cover and cook until potatoes are tender, stiring occasionally
6. Add clams, clam base, old bay, cream, and milk
7. Stir together.
8. Cook for about 30-45 minutes.
9. Stir occasionally.
10. whisk in instant mashed potatoes as needed for thickening.
11. adjust seasoning with salt & pepper as needed.
