Here's a recipe for a delicious rich, coffee and chocolate-flavored mousse that's easy to prepare. This recipe originally came from Athens Foods which is famous for their commercially sold phyllo dough. The picture below comes from their web site. Read more . This recipe is easy to prepare and the results are really delicious. You can prepare them in phyllo cups or pipe out the mousse into bowls or even use this to top your favorite cupcake. I've used this as fillings for cakes over the years and even used the mousse in pre-cooked pie shells with chocolate shavings on top.
Ingredients:
cafÉ mocha
1/3 cup heavy whipping cream
1 tablespoon cold water
1/2 teaspoon plain gelatin
3 tablespoons powdered sugar
1/4 teaspoon instant coffee powder
2 tablespoons semisweet chocolate chips
15 athens® mini fillo shells (1 box)
2 tablespoons shredded coconut, for garnish
optional :1 tablespoon kahlua
Directions:
1. In a small chilled bowl, whip heavy cream to full volume.
2. Chill for 1 hour.
3. In a small pan, combine water, Kahlua and gelatin and let stand for 1 minute.
4. Add powdered sugar, instant coffee and chocolate chips.
5. Over low heat stir until chocolate chips are melted.
6. Bring to room temperature.
7. Gently fold the chocolate mixture into the whipped cream.
8. Chill for 1 hour.
9. Spoon or pipe 2 teaspoons of filling into each Fillo Shell.
10. Garnish with shredded coconut. Serve immediately.
11. Tip: When the mousse has set, just put it all into large baggie, pushing it down to one corner of the bag and twist the top, squeezing the mousse tightly into that corner. With scissors, cut a small hole and squeeze the mousse directly into either the phyllo cups, on top of cupcakes, into small bowls or on to cake or into a cooked and cooled pie shell.
