Ingredients:
1/4 cup (1 ounce) preshredded fresh parmesan cheese
1/4 cup low-fat buttermilk
2 teaspoons lemon juice
1 1/2 teaspoons anchovy paste
1/4 teaspoon worcestershire sauce
1/8 teaspoon pepper
1 garlic clove
1/3 cup plain fat-free yogurt
2 (10-ounce) bags romaine salad or 12 cups sliced romaine lettuce
1 cup fat-free garlic-and-onion croutons
2 tablespoons (1/2 ounce) preshredded fresh parmesan cheese
Directions:
1. Combine first 7 ingredients in a blender; process until smooth. Pour into a bowl; stir in yogurt. Combine lettuce and croutons in a large bowl. Drizzle yogurt mixture over salad; toss gently to coat. Spoon salad into six individual bowls; sprinkle each with 1 teaspoon cheese.
