This is a well-balanced salad, with lots of vitamins C and A, fiber, Calcium, Iron and protein. While it is a little high in fat, half of it is unsaturated. This salad is also high in carbs, which isn't too good, but a lot of that is Fiber. Overall, this is a nice, healthy salad that you won't have to feel guilty about.
Ingredients:
1/2 cup low-fat buttermilk
2 tablespoons part-skim ricotta cheese
2 tablespoons grated parmesan cheese
2 anchovy fillets, rinsed and mashed to a paste
1 garlic clove, crushed
1/4 teaspoon freshly ground pepper
4 cups sliced romaine lettuce leaves
6 cherry tomatoes, halved
Directions:
1. To prepare the dressing, in a small bowl, combine the buttermilk, ricotta, Parmesan, anchovies, garlic and pepper
2. In a large salad bowl, combine the lettuce and tomatoes. Drizzle with the dressing; toss to coat.
