I took this from Ranch Marinated Oven-fried Chicken from JustJanS and changed it into my own because of what I was lacking in ingredients. I MacGyver'ed this into an even easier yet yummy potluck or bbq recipe. And it's not too bad for fat content either. The cooking time does not include the marinating.
Ingredients:
32 chicken drumsticks
1 liter buttermilk (i used 1%)
1 (1 ounce) package ranch dressing mix
2 tablespoons hot sauce
2 cups caesar-flavor croutons
1 cup corn flakes
1/3 cup parmesan cheese (i used low fat version)
canola oil cooking spray
Directions:
1. Mix buttermilk, dressing mix and hot sauce together and then divide into 2 large ziploc bags. Put chicken in bags and marinate overnight.
2. For coating, whiz croutons, cornflakes and parmesan cheese in food processor until crumbs are fine.
3. In a shallow bowl or plate, spread crumbs and roll chicken in it til drumsticks are covered completely. Place on baking sheet that has been sprayed with cooking spray. Spray chicken with cooking spray. Bake at 400F for 25 min, then lower temperature to 350F and cook for another 15 minute.
