Caesar Dressing - Lightened Up

Every bit as great as the restaurant dressing with a fraction of the calories and fat.
Ingredients:
1 cup light mayonnaise
5 tablespoons egg substitute
1/4 cup grated parmesan cheese
2 tablespoons water
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1 tablespoon anchovy paste
2 garlic cloves, minced
2 teaspoons sugar substitute
1/2 teaspoon fresh coarse ground black pepper
1/4 teaspoon salt
12 dried parsley flakes, crushed fine
Directions:
1. Combine all ingredients in a medium bowl. Use an electric mixer to beat ingredients for about 30 seconds. Cover bowl and chill for several hours before serving so that flavors can develop.
