Cabbage Toran

Here's a delicious reason to eat this nutrient rich vegetable! Serve this with rice.
Ingredients:
2 tablespoons vegetable oil
1/2 teaspoon mustard seeds
8 cups shredded cabbage
1/4 teaspoon ground turmeric
1/8 teaspoon chili powder (optional)
2 -3 tablespoons shredded unsweetened coconut
salt
Directions:
1. Heat the oil in a large skillet.
2. Add the mustard seeds.
3. Lower the heat and cover the skillet while the seeds are popping.
4. After the popping has stopped, add the cabbage.
5. Stir well to coat.
6. Cover and simmer 20 minutes.
7. Add the turmeric, chili powder if desired, coconut and salt.
8. Mix well.
9. Cover and simmer 10 minutes more.
10. Serve warm.
11. Enjoy!
12. Variation: To make Vegetable Toran, replace the cabbage with 6 cups frozen mixed vegetables.
13. Proceed with recipe.
