Delicious and easy soup! Normally hubby and I dislike cooked cabage, but for some reason it's wonderful in this soup! Ingredients:
1 lb ground beef |
1 (16 ounce) package coleslaw mix |
1 chopped onion |
1 (28 ounce) can crushed tomatoes |
2 (15 ounce) cans beef broth |
1 cup water |
1/4 cup brown sugar |
1 tablespoon lemon juice |
1/3 cup brown rice |
1 teaspoon italian seasoning |
1/4 teaspoon basil |
1 tablespoon parsley |
Directions:
1. Brown and drain hamburger. Add onion and cole slaw, cook covered 4 minutes. 2. Add tomatoes, broth, water, brown sugar, and lemon juice and spices. 3. Bring to a boil, add rice. 4. Reduce heat, simmer 45 minutes or until rice is tender. |
