Cabbage-Carrot Slaw with Citrus Dressing

This colorful marinated slaw pairs well with barbecued meats and spicy entrées, thanks to the cool, slightly sweet dressing.
Ingredients:
2 1/2 cups thinly sliced red cabbage (about 1/2 small head)
2 cups shredded carrots (about 2 large)
1/3 cup vertically sliced red onion (about 1/2 small)
1/3 cup green bell pepper strips
2 tablespoons chopped fresh cilantro
2 tablespoons honey
1/2 teaspoon grated fresh lime rind
1/4 cup fresh lime juice
2 tablespoons orange juice
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cumin
Directions:
1. Combine first 5 ingredients in a large bowl; toss gently.
2. Combine honey and next 7 ingredients in a small bowl; stir well with a whisk until blended. Pour honey mixture over cabbage mixture. Cover; chill at least 2 hours.
