This recipe came about after reading Cabbage Beef Casserole (Ww 5 Points) by Redsie and then I starting playing! I took out some ingredients and added some others. The end result was a tasty comfort food casserole. Thanks Redsie for the Inspiration. Great one dish meal - Do ahead then pop in the oven 1 1/4 hours before dinner
Ingredients:
1 lb extra lean ground beef
3/4 cup onion, chopped
2 medium carrots, cleaned, sliced
1/2 cup tomato juice
1 tablespoon worcestershire sauce
1 teaspoon chili flakes (optional)
4 cups cabbage, coarsely shredded
3 roma tomatoes, chopped
3 ounces low-fat cheese, shredded (your choice)
salt & pepper
Directions:
1. Brown the meat and onions.
2. Add carrots, tomato juice, Worcestershire sauce, chili flakes.
3. Season with salt and pepper.
4. Lightly spray a 2 1/2 quart casserole dish (with lid) with oil.
5. Put the cabbage in the bottom of the casserole dish.
6. Add the meat mixture on top.
7. Top with tomatoes.
8. Cover and bake in a 350°F oven for 1 hour.
9. Remove cover add cheese continue baking for a further 15 minutes.
