Buttery Toffee Cookies

Ingredients:

  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup english toffee bits

Directions:

  1. Heat oven to 350°.
  2. In large bowl, beat sugar, butter, egg and vanilla until creamy.
  3. Add flour, baking powder and soda.
  4. Beat on low until well mixed.
  5. Stir in toffee bits with a spoon.
  6. Shape into 1-inch balls.
  7. Roll in sugar.
  8. Put 2-inches apart on ungreased baking sheet.
  9. Flatten slightly with bottom af glass.
  10. Bake for 9 minutes or until edges are just lightly brown.
  11. While warm, sprinkle with more sugar.
