Buttery Mixed Nut Brittle

This is the best taste and texture nut brittle I've ever had. I adapted a recipe I found years ago, tweaking it until it was close to perfect. Use any single nut or combination that floats your boat. As for the 24 servings, it makes two cookie sheets worth and it depends on how generous you are.
Ingredients:
2 cups sugar
1 cup light corn syrup
1/2 cup water
1 cup butter, cut into bits
4 cups mixed raw nuts (i use walnuts, almonds, pecans and pine nuts)
2 tsp. vanilla extract
1/1-2 tsp. baking soda
non-stick spray
Directions:
1. Spray two baking sheets and set aside.
2. In a large heavy saucepan, mix sugar, corn syrup and water.
3. Cover and heat to boiling over medium heat.
4. Add butter, stir until butter is melted.
5. Insert candy thermometer.
6. Over medium heat, cook without stirring until the mixture reaches 305 degrees (35 – 45 minutes)
7. Gradually add nuts, keeping mixture boiling.
8. Remove from heat.
9. Add vanilla and baking soda. Beat vigorously 15 seconds, being careful not to splatter.
10. Immediately pour onto the two baking sheets. Spread evenly with two forks, until thin and fairly even thickness.
11. Cool completely.
12. Break into pieces.
13. Store in airtight container (I refrigerate it)
