This is the cake I made for my grandmother's birthday party, altered from a cupcake recipe by Nicole from Baking Bites ( /2007/0 6/vanilla-buttermilk-cupca kes/). The lack of salt in this recipe allows the sweetness of the lower sugar content and the rich butter shine through.
Ingredients:
2 2/3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cup sugar
1/4 cup unsalted butter, room temperature
1/4 cup shortening
2 eggs
1 1/2 tablespoons vanilla
2 cups buttermilk
Directions:
1. Preheat oven to 350F. Grease / flour 2 9 cake pans.
2. In a medium bowl, stir together flour, baking soda, and baking powder.
3. In a large bowl, beat the butter, shortening and sugar together until creamy.
4. Beat in the eggs and the vanilla.
5. Add half of the flour mixture to the butter mixture and stir until almost combined.
6. Add buttermilk and stir, again, until almost combined.
7. Add the rest of the flour and stir until all ingredients are mixed in.
8. Pour into prepared pans.
9. Bake 40-45 minutes.
