This particular cookie recipe which I usually make for Christmas is my brothers favorite! It involves more work than some cookies but it's well worth the effort.
Ingredients:
crust
1 1/2 cups flour
1/4 tsp. salt
3/4 cup packed light brown sugar
1/2 cup butter, cut into 1/2 inch pieces
topping
1/4 cup light corn syrup
1 package (6 ounces) butterscotch pieces
pinch of salt
2 t butter or margarine
1 t water
2 cups walnuts, chopped medium fine
Directions:
1. In a bowl mix flour, salt, and sugar.
2. Cut in the butter until mixture resembles coarse meal.
3. Spread the mixture evenly in a greased 13 x 9 x2 pan.
4. With your hand press firmly into a smooth, compact layer.
5. Bake in 375 degree oven for about 12 minutes or until lightly browned.
6. Remove pan to rack while you prepare the topping.
7. Combine syrup, butterscotch pieces, salt, butter, and water in a large saucepan.
8. With rubber spatula stir over low heat, pressing butterscotch pieces until melted and smooth.
9. Quickly stir in the walnuts and remove from heat.
10. Work quickly to prevent the mixture from hardening.
11. Place large spoonfuls on the warm, baked crust.
12. With the back of a spoon spread the mixture to within 1/2 - 3/4 of an inch of the crust edges.
13. Bake in a 375 degree oven for 10 minutes.
14. Cool in pan on a rack for 30-40 minutes or until only slightly warm.
15. With small, sharp knife loosen around edges then cut into 16 bars.
16. With wide, metal spatula transfer bars to cutting board.
17. Cool thoroughly until firm.
18. Cut each bar in half.
19. Makes 32.
