While visiting Amish country a while ago, I had the opportunity, with some friends, to eat with an Amish family. The dinner was wonderfully tasteful and as old fashion as they come. Mary, the wife and mother, put together a cookbook with many of the recipes they make. Read more . This tapioca was the most requested recipe on the table. It has bananas and snicker bars in it. Not so healthy but, ohhh so good. I thought I would share it with you. Thank you Mary Hochstetler.
Ingredients:
6 cups water
1/2 tsp. salt
1 1/4 cups tapioca (small pearl)
2 cups brown sugar
2 eggs
1/2 cup evaporated milk (she calls for milnot, but i couldn't find it in my grocery store)
1/2 cup white sugar
1/2 stick butter, browned
2 tsp. vanilla
8 oz. non dairy whipped topping
3 snicker bars, chopped
bananas (optional) i used one chopped
Directions:
1. Bring water and salt to a boil, add tapioca and reduce heat, cook until almost clear. Stir often. remove from heat.
2. Add brown sugar, cover and let set for approx. 10 minutes.
3. Beat the eggs, evaporated milk and sugar and add to tapioca. Put back on heat and bring to a boil. By this time the tapioca should be clear. Remove from heat again.
4. Brown the butter and add to hot tapioca, stir in vanilla, cool.
5. When pudding is cold fold in the whipped topping as well as the Snicker bars and bananas.
