Replace the coconut with chocolate chips or dried cranberries. I found this recipe in Bake And Make Amazing Cookies. I have not tried this recipe. I'm posting this for safe keeping.
Ingredients:
1 egg
1 cup brown sugar (250 ml)
1/4 cup butter, melted (50 ml)
2 teaspoons vanilla (10 ml)
3/4 cup all-purpose flour (175 ml)
1 teaspoon baking powder (5 ml)
1/4 teaspoon salt (1 ml)
1/3 cup chopped walnuts (75 ml)
1/3 cup sweetened flaked coconut (75 ml) or 1/3 cup shredded coconut (75 ml)
Directions:
1. Preheat the oven to 350.
2. Beat together the egg, sugar, butter and vanilla until smooth. Blend in the flour, baking powder and salt. Stir in the walnuts and coconut.
3. Spread the mixture evenly in the pan. Bake 20-25 minutes, until light golden. Cool completely in the pan on the cooling rack.
