makes roughly 77 1/8th inch thick cookies
Ingredients:
1 cup whole wheat flour
1 1/3 cup flour
1/2 tsp baking powder
1/2 tsp salt
1 cup butter
1 cup brown sugar
1 tsp vanilla
1 egg
1 cup pecans
Directions:
1. combine flour, baking powder and salt.
2. beat butter and sugar til creamy.
3. Beat in vanilla and egg
4. Gradually mix in dry ingredients
5. Stir in pecans (whole or chopped)
6. Shape dough into long wrectangular logs 1in x 3in, wrap in celophane and freeze at least two hours.
7. Pre-heat to 350.
8. Slice 1/8 in think and place on greased cookie sheet 1/2 -1inch apart.
9. Bake 9-14 minutes depending on shape and thickness, until LIGHTLY browned around edges.
10. Cool on wire rack.
