A recipe that goes back to my grandmother, and I've been making it for my family for years. Even people who dislike coconut tend to love this bar - the rich butterscotch filling seems to dominate. I love the crust, too, but be warned, it is VERY buttery and will leave a butter stain if you set them on your lap (but why would you do that? Read more ?!?).
Ingredients:
crust
1 cup butter, softened
1 cup brown sugar
2 cups flour
1/2 teaspoon salt
filling
4 eggs, beaten
2 teaspoons baking powder
2 cups brown sugar
2 cups coconut
1 teaspoon salt
4 tablespoons flour
1 teaspoon vanilla extract
Directions:
1. For the crust, cream together butter and sugar; add flour and salt, mix together well.
2. Pat into an ungreased 10x15 baking sheet.
3. Bake at 350 degrees for 15 minutes. While crust is baking, prepare filling.
4. For filling, beat eggs well; add remaining ingredients and mix together until well blended.
5. Pour over hot crust and return pan to oven for an additional 20 to 25 minutes, until bars are nicely browned.
