Roasted butternut squash bisque with apple, curry, and nutmeg
20 ounces butternut squash
1 tablespoon butter
1 small onion
1 medium apple
16 ounces fat free chicken broth
1/8 cup whole milk
1/8 cup light cream
1. Roast squash at 450 for 1/2 hour
2. Melt butter in saucepan
3. peel and chop onion and apple
4. saute onion and apple in butter until soft
5. add butternut squash, and dash of curry powder, nutmeg, and cinnamon
6. add chicken broth
7. simmer until tender about 25 minute
8. blend with hand held blender or in blender
