These waffles are the best I have ever tasted. My kids love them. They have a extra-light texture and taste delightful. They make a lot so get ready to keep em rolling!
Ingredients:
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 eggs, seperated
2 cups buttermilk
2/3 cup sour cream
1/2 cup vegetable oil
fresh apricot slices, optional
mint leaves, optional
Directions:
1. In a mixing bowl, combine dry ingredients.
2. In another bowl, beat egg yolks.
3. Add buttermilk, sourcream and oil; stir into dry ingredients just until combined.
4. Beat egg whites until stiff peaks form; fold into batter.
5. Bake in a preheated waffle iron according to manufacturer s directions until golden brown. Garnish with apricots and mint leaves if desired.
6. Serve with warm maple syrup! My kids love to put whip cream on these too!!
