I found this recipe in a Inn cookbook. Made some changes to make it somewhat healthier. I enjoy them with yogurt and fruit
Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1/4 cup brown sugar, packed
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1 teaspoon salt
3 eggs, seperated at room temp
2 cups buttermilk
1 1/2 cups flax seed meal
1 teaspoon vanilla
Directions:
1. In large mixing bowl, combine dry ingredients (minus flaxseed meal) and mix well.
2. In another bowl whisk together egg yolks, buttermilk, flaxseed meal, and vanilla.
3. Add dry ingredients and combine.
4. Beat egg whites until stiff.
5. Fold egg whites into batter.
6. Pour into waffle iron and cook until desired color or until done.
