This tea cake recipe makes 10 to 12 dozen at a time..so be ready to bake for a while... but they are wonderful...great for Christmas giving. They can also be decorated..
Ingredients:
1 cup shortening
3 cups sugar
2 eggs, slightly beaten
1 cup whole milk
1 teaspoon vanilla
1/2 teaspoon ground netmeg
1 cup buttermilk
1 1/2 teaspoons soda
8 to 10 cups flour (enough to make a soft dough)
Directions:
1. Cream shortening and sugar.
2. Add slightly beaten eggs, whole milk, vanilla, and nutmeg; stir well.
3. Mix buttermilk with soda and then add to the mixture.
4. Mix in enough flour to make a soft dough.
5. Roll thin, cut into strips, lengthwise, then across, to make squares and rectangles.
6. Place on greased pans and bake at 400 degrees for 10 to 12 minutes.
7. Yield 10 to 12 dozen cookies
