DELICIOUS! This was given to me by an online buddy when I was still engaged to my Southern husband. They have always pleased him. I have always liked it because it calls for all-purpose flour. Beinging a Northerner. I'm not good with self rising. GRITS (Girls Raised In The South & GRINS (Girls Raised In Northern States) forever!!!!
Ingredients:
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup crisco vegetable shortening
1 cup buttermilk
1 cup melted butter (optional)
Directions:
1. Preheat the oven to 450 degrees F.
2. Sift together the flour, baking powder, baking soda, and salt in a large mixing bowl.
3. Add the shortening and cut it in with a pastry cutter or two knives till the mixture is well blended and mealy.
4. Add the buttermilk and mix with a large spoon till the dough is soft, adding a little more buttermilk if necessary.
5. Turn the dough out on to a lightly floured surface and, using a light touch, turn the edges of the dough toward the middle, pressing with your hands.
6. Press the dough out to a 1/2 inch thickness, cut straight down into even rounds with a biscuit cutter or a small juice glass.
7. If you want to, now is the time to dip each biscuit in the melted butter. Just a quick dip and BUTTER, not margerine.
8. Place the rounds 1/2 apart on a large baking sheet.
9. Gather up the scraps of dough and and repeat the procedure.
10. Bake the biscuits until lightly browned on top, about 12 minutes. Makes about 10 biscuits.
