This recipe came from Great American Home Baking. When I'm craving fresh bread and don't have a lot of ingredients, I'll whip these up. I rarely have buttermilk in the house, but in place of buttermilk, just add a splash of vinegar to some milk.
Ingredients:
2 cups flour
1 tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
5 tablespoons chilled butter
1 cup buttermilk (or use regular milk and add a splash of vinegar)
Directions:
1. Preheat oven to 425.
2. Sift together flour, baking powder, salt, and baking soda.
3. Cut butter into flour until coarse crumbs form.
4. Add buttermilk and toss until dough forms.
5. Turn onto lightly floured surface and gather into a disk.
6. Knead lightly a few times just until smooth. Pat into 3/4 thick and cut with biscuit cutter.
7. Place biscuits 2 inches apart on ungreased baking sheet. Bake 12 to 15 minutes or until golden.
