Ingredients:
2 cups king arthur unbleached all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup buttermilk
1/4 cup butter, melted
1 teaspoon vanilla extract
1 cup dried cranberries
oil for deep-fat frying
confectioners' sugar
Directions:
1. In a small bowl, combine the flour, sugar, baking powder and salt. Combine the eggs, buttermilk, butter and vanilla; add to dry ingredients just until moistened. Fold in cranberries.
2. In an electric skillet or deep fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1-2 minutes on each side. Drain on paper towels. Dust with confectioners' sugar. Yield: 3-1/2 dozen.
