A quick, easy and fresh way to prepare this root vegetable. Best if you can find small turnips with nice fresh greens still attached. This is a great side dish for fish or beef.
Ingredients:
1 bunch small (japanese) turnips with their greens (about 1 lb)
1.5 tsp butter
lemon juice to taste
1/4 cup sesame seeds, toasted until very dark and roughly ground with a good pinch of salt
salt
lemon juice to taste
Directions:
1. Separate the greens from the turnips; wash the turnips and cut into quarters. Rinse the greens and slice horizontally into wide strips.
2. Melt the butter in a medium saucepan. When it starts to sizzle, add the turnips and sautee for about 3 minutes. Do not allow the turnips to brown.
3. Add a small glass of water and cover the saucepan. Simmer the turnips until just tender, about 5 minutes.
4. Uncover the saucepan and add the greens and a good pinch of salt. Cook for about 2 minutes more, until the greens just wilt.
5. Add a few drops of lemon juice, to taste and serve sprinkled with the sesame salt.
