this butter chicken with its creamy chilly sauce is simply delicious served hot and soaked up with hot naan and a green salad
Ingredients:
1 kilogram chicken breasts
1/2 cup plain yoghurt
2 tsps ginger and garlic paste
1 tsp ground black pepper
1/4 cup butter
20ml oil
1and 1/4 cups fresh cream
30ml lemon juice
1tsp white pepper(ground)
1 and 1/4 cups tomato puree
1 tsp salt
1and1/2 - 2 tsps red chillie powder (to taste)
Directions:
1. wash cube chicken in big bite sized pieces drain
2. mix yoghurt ,oil ,ginger& garlic paste,1/2 of lemon juice and spices
3. smear chicken pieces and leave overnight
4. cook in pot on medium heat until almost dry
5. sauce
6. add rest of lemon juice ,tomato puree and any leftover marinade to melted butter
7. cook sauce until thickened
8. just before serving add cream to sauce
9. place chicken on platter pour sauce over
10. decorate with cut fresh cilantro leaves
11. serve pipping hot with naan and a green salad
