An easy Mexican inspired one pot rice dish .
Ingredients:
1 cup uncooked rice
2 cups water
1lb lean ground beef
1 small onion, chopped
1 t chili powder
1 tsp each onion powder, garlic powder, cumin, cayenne pepper, salt and ground black pepper(or, you can use a taco seasoning packet)
2 10 oz cans rotel tomatoes(or one rotel and one regular diced, for a milder flavor)
1 can black or refried beans
1 cup sliced black or green olives
1 cup whole kernel corn(fresh or frozen)
8oz sour cream
2 cups shredded mexican or cheddar cheese
Directions:
1. Brown beef in large skillet. Add remaining ingredients other than sour cream and cheese. Stir until combined and bring to a boil. Reduce heat and cover. Cook for 20-25 minutes until rice is to desired doneness, stirring occasionally. Add sour cream and cheese when serving. Serve with tortillas or fried tortilla strips on top.
