Ingredients:
1/2 cup scallion, chopped
1 garlic clove, chopped
1 cup tomato, chopped
2 tablespoons cilantro
3 cups spinach, chopped
3 cups collard greens, chopped
1 serrano pepper, seeded and chopped
6 (10 inch) whole wheat tortillas
Directions:
1. Combine all ingredients but tortillas in blender.
2. Blend into chunky paste.
3. Spread evenly amongst tortillas.
4. Roll tortillas, seal in individual plastic containers and freeze.
