Bulgar Pilavi (Cracked Wheat Pilaf)

Ingredients:
4 tablespoons butter or 4 tablespoons margarine
1 onion, finely chopped
1 cup bulgar cracked wheat
3 cups water or 3 cups beef broth
salt
Directions:
1. Melt 2 Tblsp. butter in a large skillet over medium to high heat.
2. Add onion, and stirring constantly, fry until soft, about 3 minutes.
3. Add bulgar and remaining 2 Tblsp. of butter and fry for another minute, stirring constantly to mix well.
4. Stir in water or broth, and bring to a boil.
5. Reduce heat to simmer, cover, and cook for about 25 minutes until bulgar is tender.
6. Add salt to taste, stir well. Serve warm.
