Love this skillet cornbread! From a local news program.
Ingredients:
1/4 cup butter
1/2 cup chopped onion
2 t. oil
1/2 cup self-rising flour
1-1/2 cups self-rising cornmeal
1 egg, slightly beaten
1-1/4 cup buttermilk
1/2 tsp. garlic powder
1/2 tsp. chili powder
1/2 tsp. onion powder
1 tsp. seasoned salt
3/4 cup grated cheddar cheese
1 cup black beans (rinsed & drained)
1/4 cup whole sunflower seeds
Directions:
1. Preheat oven to 450 degrees.
2. Melt 1/4 cup butter in a 12 round iron skillet.
3. Saute onions until clear then transfer to mixing bowl.
4. Add 2 T. oil to your skillet and put it in oven to preheat for at least 5 minutes.
5. To the onions, add cornmeal, flour, beaten egg, buttermilk, and spices, then stir to mix.
6. Fold in cheese, beans and seeds.
7. Carefully pour into hot skillet.
8. Cook for 15-20 minutes.
