A few years ago I had a couple of left over baked potatoes. The next day I sliced them into rounds and pan fried them. They were the best home fried I every ate. Later I had papas brava at a tapas bar and the idea was planted. Read more . These are easy to make and my football group loves them.
Ingredients:
2 baked potatoes sliced into 1/4 rounds
1 t butter
2-3 t hot sauce like franks (louisiana style)
pinch garlic powder, thyme ,lemon pepper
salt and pepper
Directions:
1. Over medium high heat melt the butter
2. Add the potato rounds in a single layer
3. Salt and pepper to taste
4. When the down side is golden, turn
5. Reseason with salt and pepper
6. Whisk together the rest of the ingredients
7. When both sides are golden, add the house sauce and toss.
8. Serve immediately - Ranch dressing or sour cream make good dips
