This recipe is from the Carmen Creek recipe card I picked up at the Wholefoods Market. I have not made these but have had buffalo at Wholefoods and it was very good and savory. Would be a nice appetizer to have at a party to offer guests something new to try.
Ingredients:
2 lbs ground buffalo meat
2 eggs, slightly beaten
1 cup shredded mozzarella cheese or 1 cup gorgonzola
1/2 cup dry breadcrumbs
1/4 cup chopped onion
2 tablespoons grated parmesan cheese
1 tablespoon ketchup
2 teaspoons worcestershire sauce
1 teaspoon italian seasoning
1 teaspoon dried basil
1/2 teaspoon pepper
Directions:
1. combine all ingredients.
2. shape into 1 inch balls.
3. place in single layer on a cookie sheet
4. bake at 350' for 10-15 min or till cooked through.
5. Drain and let stand.
