tasty of buffalo chicken with none of the fat
Ingredients:
2 pounds chicken breast (ground)
2 tablespoons olive oil
1 cup chopped onion
1 cup chopped carrot
1 cup chopped celery
15 oz tomato sauce
15 oz diced tomato
1 tablespoon paprika
2 cups chicken broth
1/2 cup hot sauce
1 t salt
1 t pepper
4 cloves garlic
Directions:
1. brown the ground chicken in the oil.
2. add the garlic, carrots, onion, and celery.
3. cook for 8 minutes.
4. add the chicken broth, scrapping up bits from bottom.
5. add the spices.
6. cook, stirring frequently, for 10 minutes.
7. add the tomatoes and hot sauce.
8. cook for ten minutes.
9. (can serve with tortilla chips broiled with blue cheese)
