Lower in fat and calories than beef. Zucchini makes it nice and moist.
Ingredients:
1 1/10 lb ground buffalo
235 g zucchini, shredded
2 eggs
1/2 cup bread crumbs
2 tbsp olive oil
1 salt
1 pepper
Directions:
1. Shred zucchini, add ground buffalo, eggs, bread crumbs and seasoning.
2. Form patties and pan fry until browned on both sides.
3. Serve on a whole grain bun, with mashed potatoes, or veggies.
