Buffalo Beer Chili

Buffalo meat is an excellent alternative to beef because it is much leaner and has less fat. If you can't find buffalo meat, you can use ground turkey or chicken as well. From: The Lazy Gourmet Rides the Range by Suzi Ashby.
Ingredients:
2 lbs ground buffalo meat
1/4 cup onion, diced
1 cup mushroom, sliced
2 tablespoons worcestershire sauce
2 (14 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
2 teaspoons chili powder
1/2 teaspoon pepper
1 teaspoon paprika
1 (14 ounce) can kidney beans, rinsed and drained
2 (12 ounce) cans beer, non alcohol if preferred
Directions:
1. Brown meat, onions and mushrooms in skillet with Worcestershire. Pour off excess drippings. Place in large pot.
2. Add tomatoes, tomato paste, chili powder, pepper, paprika and beans. Pour in beer.
3. Simmer one to two hours. Stir occasionally to keep from sticking in bottom of pan. Serve with salad and garlic bread.
4. Note: This one is not that hot. You won't need a fire extinguisher to eat it. You can heat it up by adding Tabasco sauce to taste near the end of the cook time.
