Buckwheat Vegan Cupcakes

Healthy, vegan and yummy.
Ingredients:
1 cup soymilk
1 teaspoon apple cider vinegar
1 1/4 cups buckwheat flour
2 tablespoons cornstarch
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon canola oil
1/3 cup applesauce
3/4 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon almond extract
Directions:
1. Preheat oven to 350.
2. Whisk together soy milk and vinegar, set aside for a minute.
3. Beat together soy milk mixture, oil, sugar and extracts.
4. Sift in the flour, baking powder, baking soda and salt and milk until no lumps remain.
5. Fill cupcake liners two thirds of the way up and bake for 20-22 minutes.
