Everybody has a recipe for Buckeyes....this one is my favorite. I think I need one NOW!
Ingredients:
1 stick butter, room temperature
1 cup peanut butter, creamy
2 cups powdered sugar
6 ounces chocolate chips
1 ounce unsweetened chocolate square, coarsely chopped
Directions:
1. With electric mixer, cream butter, peanut butter and confectioners' sugar uintil smooth. Refrigerate overnight or for several hours. Form into medium/small balls and place on cookie sheet. Poke a toothpick into each ball to use as a handle in dipping later. Freeze for 30-45 minutes or until balls are firm.
2. Microwave both choclates and stir until smooth. Using the toothpick handle, dip each ball into chocolate, leaving the center uncated to look just like a buckeye. Place dipped buckeyes on wax paper and allow to set up overnight.
