A simple dish with one of my favorite vegetables. If you can't get creme fraiche easily, you can substitute cream cheese. The flavor is a little less tangy, but the creaminess is important here.
Ingredients:
1 lb brussel sprouts, cleaned and with an x cut in the bottoms
1/4 cup creme fraiche
4 slices bacon, finely diced
1/4 cup pecans, finely chopped
1 tbsp onion, finely chopped
salt and pepper to taste
Directions:
1. Put a pot of salted water on the stove and bring to boil. Add the Brussel sprouts and boil for 6 minutes, drain and set aside.
2. Heat a pan on medium-high heat while the sprouts are cooking. When warm add the pecan pieces to roast . About 2 minutes. Remove and set aside. Keep your eye on them or they will burn!
3. In the same pan, add the bacon, cook until brown and crispy. Add onions and cook until tender.
4. Add the cooked Brussel sprouts to the pan and mix throughly. Then add the creme fraiche and mix until warm. Then add the roasted pecans and salt and pepper. Serve.
