A classic recipe made fun replacing the traditional baguette with crunchy pizza crust. A nice side dish for pasta.
Ingredients:
topping
3/4 cup finely chopped onion
2 cups finely diced tomatoes
3 - 4 tbsp chopped fresh parsley
4 cloves garlic (very finely chopped)
2 tbsp cooking oil (preferably extra virgin olive oil)
salt and pepper to taste
crust
3/4 cup water or beer
1 tsp salt
1/2 tbsp sugar
1 tbsp butter or margarine
2 cups and 2 tbsp white flour
1 tsp yeast
cornmeal
Directions:
1. Mix onion and tomatoes together and let set in a wire strainer for about 2 hours to drain excess water. Place in small bowl and mix in rest of ingredients. This tastes best if it is let set in the fridge for a few hours ahead of time as well because the flavors develop.
2. Put all the crust ingredients into a bread machine and turn it to the dough setting. When dough is ready to be used, stretch it to a circle roughly 14 inches in diameter. Pat dough with cornmeal and place cornmeal side down on a baking sheet or pizza pan that is ungreased.
3. Spread topping all over the crust evenly and then top with shredded mozzarella to your own preference. Bake at 400 for 25 - 30 minutes until crust is golden and mozzarella cheese is melted and bubbly. Serve immediately.
