Bruschetta Chicken and Mushrooms

Ingredients:

Directions:

  1. Preheat the oven to 350°F
  2. Brown the chicken breasts in a small amount of olive oil.
  3. Remove chicken and add butter. Saute mushrooms and garlic in butter until soft.
  4. Place browned chicken on cookie sheet.
  5. Top with sauteed mushrooms and slice of mozzarella cheese.
  6. Spread french bread with butter or olive oil.
  7. Place around chicken on cookie sheet.
  8. Place cookie sheet in oven for 10 minutes, or until cheese is melted and bread is toasted.
  9. Meanwhile, dice tomatoes, onions, and basil.
  10. Mix tomatoes, italian seasoning, onions and basil in a small bowl with salt and pepper to taste.
  11. Remove chicken and bread from oven.
  12. Place bread on serving plate.
  13. Top with chicken/mushroom/cheese mixture.
  14. Add 1/4 of tomato mixture to the top.
  15. Serve and enjoy!
