If you dont like bruschetta you were born without a heart
Ingredients:
1 loaf of ciabatta or sourdough bread
2 garlic cloves
85ml of olive oil
1 small red onion, finely chopped
6 roma tomatoes, finely chopped
3 tbs basil, torn
Directions:
1. Preheat grill to high. Slice the ciabatta into 1cm slices and toast for about 2 minutes, until lightly golden. Rub with one of the peeled cloves of garlic. Finely chop the remaining garlic. Gently mix with the red onion, tomatoes, basil and remaining oil. Season to taste with freshly cracked black pepper. Spoon the mixture onto each piece of bread garnish with extra pepper and a whip of olive oil. Serve straight away before the bread becomes soft again.
