This is the Original Brunswick Stew recipe I picked up in Brunswick, Georgia while on vacation.
Ingredients:
1 chicken (3 pounds)
1 pound lean beef
1 pound pork
3 medium onions, chopped
4 cans tomatoes
5 tablespoons worcestershire sauce
1 1/2 bottles ketchup
1 tablespoons tabasco
2 bay leaves
1/2 bottle chili sauce
1/2 teaspoon dry mustard
1/2 stick butter
3 tablespoons vinegar
2 cans small butter beans
2 cans creamstyle corn
1 can small english peas
(3 small diced irish potatoes and box of frozen, sliced okra optional)
Directions:
1. Place meat in large heavy pot.
2. Season with salt and pepper; add onions and cover with water.
3. Cook until meat falls from bones (several hours)
4. Remove from heat and allow to cool.
5. Tear meat into shreds and return to stock.
6. Add your next 8 ingredients and cook for one hour, stirring occasionally.
7. Then add your next 4 ingredients and cook slowly until thick.
