This stew has a long ingredient list and might be more time consuming to make than other recipes but it is definitely worth it. This recipe is a bit chunky but you can puree it for a smoother stew if you prefer. This also tastes good with a little vinegar based barbecue sauce added to it. This recipe makes a lot so you may want to halve it.
Ingredients:
1/4 cup butter
1 3/4 cups ketchup
1/4 cup mustard
1 tablespoon heinz 57 steak sauce
1/4 cup vinegar (white or cider is fine)
2 garlic cloves, minced
1 teaspoon pepper
1/2 teaspoon oregano
4 tablespoons bacon drippings
1/4 teaspoon poultry seasoning
1/2 teaspoon red pepper flakes
1 teaspoon liquid smoke
3 tablespoons worcestershire sauce
1 teaspoon tabasco sauce (to taste)
1/2 tablespoon lemon juice
1 teaspoon brown sugar
1/4 cup butter
3 cups diced potatoes
1 cup chopped onion
2 (14 ounce) cans chicken broth
2 smoked chicken breasts
1 lb smoked pork
1 (8 ounce) can creamed corn
2 (8 ounce) cans stewed tomatoes
1 cup frozen peas (optional)
1 (8 ounce) can lima beans, drained (optional)
Directions:
1. Melt 1/4 cup butter and add sauce ingredients. Simmer for ten minutes, do not boil!
2. In large pot melt 1/4 cup butter and add potatoes, onion, broth and meats. Boil until potatoes are done, reduce heat and add tomatoes, corn, peas and beans.
3. Add the sauce mix and simmer slowly for two hours, stirring often to keep from burning on the bottom.
