I have made this several times for breakfast on Christmas morning . My family requests this recipe every year. I love it because not only does it taste wonderful it's easy for me to prepare the evening before and then pop in the oven in the morning! Read more ! I like to serve this with baked fruit (recipe found on my homepage).
Ingredients:
2 cups ground fully cooked ham (it can be in chunks too)
1/2 cup sliced green onions
1/2 cup finely chopped green pepper
2 tbs cooking oil
8 flour tortillas
2 1/2 cups (10 ounces) shredded cheddar cheese, divided
4 eggs
2 cups light cream
1 tbs flour
1/4 tsp garlic powder
2 to 3 drops hot pepper sauce( if you like)
Directions:
1. In a skillet, saute ham, onions and green pepper in oil until vegetables are tender.
2. Place 1/3 cup down the center of each tortilla; top with 3 tbs cheese.
3. Roll up and place seam side down in greased baking dish
4. In a bowl, beat the eggs.
5. Add to the eggs..cream, flour, garlic powder and hot pepper sauce(if you like);mix well.
6. Pour over tortillas.
7. Cover and chill 8 hours overnight. ( I do the overnight ,so easy to pop in the oven the next day when you have guests)
8. Remove from the refrigerator 30 minutes before baking.
9. Bake, uncovered , at 350* for 45-50 minutes or until a knife inserted near the center comes out clean.
10. Sprinkle with remaining cheese.
11. Let stand 5 minutes.
12. Serve with salsa and sourcream.
