This is the best breakfast casserole I've had in a very long time. It's kind of like a chili relleno. I used double the amount of green chiles the recipe called for, and I wished I added even more. This is a perfect dish to serve for company. The egg puffs up just a little, and it's as gorgeous as it is delicious. It says it serves 20, but I don't think it's possible to just eat one serving. Ingredients:
1 pint cottage cheese
1 lb monterey jack cheese, shredded
1/2 cup butter, melted
10 large eggs, beaten
1/2 cup flour
1 teaspoon baking powder
4 ounces canned diced green chiles
1 dash salt
Directions:
1. Preheat oven to 400 degrees.
2. Combine melted butter and beaten eggs together.
3. Add cheese and green chiles and mix well.
4. Add flour, baking powder, and salt and combine thoroughly.
5. Spread mixture evenly in a 9x11 greased baking dish and bake at 400 degrees for 15 minutes.
6. Reduce heat to 350 degrees and continue baking for 35 to 40 minutes.
