This is all the flavors of a country breakfast but fast enough to have durning the week when things are needed in a hurry. Just put in the oven then take shower, wake the hubby, get the kids up, wake the hubby again, dress the kids, wake the hubby onceagain, put on your make-up, drown the hubby in cold water and run.
Ingredients:
1 pound bacon
1 pound pork sausage
1 tblsp butter or margarine
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 green pepper diced.
1 tsp salt
1/4 tsp garlic salt
1/2 tsp black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded cheddar cheese
Directions:
1. Preheat oven to 400 degrees.
2. Grease a 13x9 inch casserole dish.
3. Place bacon in a large deep skillet.
4. Cook over medium high heat until evenly brown.
5. Drain, crumble and set aside.
6. Do the same for the sausage.
7. In a separate skillet, melt butter and fry onions and mushrooms until tender.
8. Place potatoes in bottom of prepared dish.
9. Sprinkle with salt, garlic salt and pepper.
10. Top with bacon, then onions, green pepper and mushrooms.
11. In a large bowl, beat eggs with milk and parsley.
12. Pour over casserole.
13. Top with grated cheese.
14. Cover and refrigerate overnight.
15. Bake in preheated oven for 1 hour or until set.
16. If preparing and baking the same day, cook for 45 minutes.
