From the Scandinavian and American Recipes cookbook, which contains recipes submitted by parents and friends of the Svenskarnas Dag Girls Choir. Preparation time does not include standing time.
Ingredients:
1 lb swedish brown beans
7 cups water
3/4 cup firmly packed brown sugar
3/4 cup dark corn syrup
1/3 cup vinegar
2 teaspoons salt
1/2 teaspoon nutmeg
2 teaspoons cornstarch
1 tablespoon cold water
Directions:
1. Wash and drain beans.
2. Add 7 cups water.
3. Cover and let stand overnight.
4. In the morning, bring to simmering point.
5. Cover tightly and simmer 3- 3 1/2 hours or until beans are tender.
6. Add sugar, syrup, vinegar, salt and nutmeg.
7. Mix cornstarch with 1 tablespoon cold water and stir into beans.
8. Simmer uncovered 15 minutes, until thickened (you may need to add more cornstarch).
9. Serve hot.
