There's always a flurry of activity around the snack bar in my kitchen, especially when I set out a plate of these brownies. Topped with a fluffy chocolaty frosting, they really live up to their name.—Linda Hardin-Eldridge, Lake Alfred, Florida
Ingredients:
1 cup butter, softened
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups king arthur unbleached all-purpose flour
1/2 cup baking cocoa
1 cup chopped walnuts
frosting:
1/2 cup butter, softened
3-1/2 cups confectioners' sugar
1/3 cup baking cocoa
1/4 cup milk
1 teaspoon vanilla extract
Directions:
1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and cocoa; add to creamed mixture just until combined. Stir in walnuts.
2. Spread into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 23-28 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
3. For frosting, in a small bowl, beat butter until fluffy. Beat in the confectioners' sugar, cocoa, milk and vanilla until smooth. Spread over brownies. Cut into bars. Yield: 2 dozen.
